However, make no mistake, keep a drink handy when consuming these jalapeños as these peppers can offer a spicy surprise. Which is why we rank our jalapeños in the middleweight class. Like any of our other peppers cutting out the core (seeds and veins) will make the pepper milder. Natural jalapeños come in varies sizes and colors unlike the jalapeños sold in the big box stores. The color will depend on how mature the pepper is when picked from the jalapeño plant. Most common color is green because most jalapeños are picked before reaching full maturity; however, if the pepper can reach full maturity the color will be red or brownish red but in some circumstances the pepper may be purple. The state of Texas declared the jalapeño as the state pepper in 1995 (see 74R H.C.R. 105).
